This rosemary gin gimlet recipe is a light, lovely cocktail. Full of herbaceous sweetness, it is also easy to make for one or for a crowd, and looks effortlessly elegant with any number of garnishes.

So I’ve had this cocktail in the back of my mind for a while for the blog. Because a lot of rosemary cocktails do well around the holidays. Rosemary looks like a Christmas tree and all.
But I got sick this year during the holiday season – which is HORRIBLE for a food blogger, it’s our busiest time. So I have at least a dozen recipes that I planned to share with you that didn’t make it to the point where I could hit that shiny publish button.
And then I thought, well, I love to garnish this rosemary gin gimlet recipe with pomegranate arils, so that rich deep red will make it a lovely Valentine’s Day cocktail.
But nope. It’s February 27. Sigh.
But I decided to post this one anyhow. Because spring.
It is honest to God WARM here.
This past week we hit 80 twice.
The trees are blooming. The daffodils aren’t just poking their green shoots up but their sunny yellow heads are popping out in full glory.
I live in East Tennessee and it is EARLY for this, but honestly, it was SO BITTER COLD this December and January, and then so recently rainy, that I am happy for this little reprieve.
And spring here is so stunning.
It feels like even the blooms have blooms, and for a girl who was born and raised in one-season-all-year Florida, it feels a bit magical.
And spring, of course, means gin to me.
And spring also means my little herb garden outside has honest to goodness fresh herbs poking up already. I mean – it really is way too early, and I fear a frost, but I will take it!
This Rosemary Gin Gimlet Recipe is one of my favorite warm weather cocktails, though, because it is so easy to make, and so easy to adapt. It’s shown here with pomegranates, but I have also popped in raspberries, or strawberries, or blackberries.
A gimlet can, in fact, be made with or without the rosemary simple syrup.
I like a classic gin gimlet recipe with just fresh lime juice (never Rose’s!) and gin.
It is so worth it to squeeze your own juice – for this and also for margaritas, which I’m also craving and we may have to talk about soon! If you don’t have one of these, it’s an inexpensive investment that pays off in tons of fresh squeezed flavor in your cocktails!
I also like the sweet herbal flavor that the rosemary simple syrup provides.
It feels like a more playful, more balanced cocktail in some ways, and a perfect segue into spring.
I’ve served it in a coupe glass (I have a thing for coupe glasses, which you can read about here). But you could as easily serve this in a double old fashioned glass.
I think this Rosemary Gin Gimlet Recipe is easy to multiply for many.
You can adapt it for four for a couple’s dinner party, or make a whole pitcher and let guests serve themselves at a party.

Rosemary Gin Gimlet
- 1 Cup Sugar
- 1 Cup Water
- 3 Sprigs Fresh Rosemary
- 3 Ounces Gin
- 1 1/4 Ounce Lime Juice Fresh Squeezed limes are best!
- 1/4 Ounce Rosemary Simple Syrup May use more or less to taste. I recommend starting here, with a small amount, and then going up a quarter of an ounce at a time until you hit the sweetness you desire.
- 1 Teaspoon Pomegranate Arils May also use sliced strawberries, a whole blackberry or raspberry, or any combination of the above.
- Make rosemary simple syrup by dissolving 1 cup of sugar into 1 cup of water. Bring to a boil. When liquid hits a boil, add two rosemary sprigs. Allow to boil for one minute, stirring slowly, then remove from heat and allow to cool.
- When rosemary simple syrup is cool, strain into a glass container. Rosemary simple syrup will keep for approximately one month int eh refrigerator.
- In a large shaker with ice, combine gin, lime juice, and rosemary simple syrup in that order.
- Stir for 40-50 revolutions.
- Strain into a chilled cocktail glass, garnish with a sprig of rosemary and 4-6 pomegranate arils, and serve immediately.
